Spinach Thoran
Ingredients
spinach or any vegetable - 500 gm
garlic cloves - 2
onion - 1 (small)
red chilly powder - 1/4 tsp
turmeric - 1/4 tsp
coconut - 1 cup
salt - 1 tsp
green chilli - 1 (slit)
oil - 1 tbsp
mustard seeds - 1/2 tsp
rice - 1 tsp
shallots - 2 (finely sliced)
curry leaves - 10
Method
Grind garlic, onion, red chilly powder, coconut and salt to a paste
with some water.
Put the spinach in a pan, add 3 tbsp water and cover and cook on
low heat.
When the spinach wilts, add coconut paste and green chilli to this.
Cover and cook till done. Heat some oil in a pan.
Add mustard seeds.
When mustard pops, add rice and stir till for sometime and add shallots.
Fry till golden brown.
Now add the curry leaves and fry for a few seconds.
Pour this over cooked spinach.
Mix well and serve hot.
