Stuffed Potatoes
Ingredients
200 grams small potatoes with jackets
1/4 grated fresh coconut
2 tablespoons chopped coriander
2 teaspoons coriander-cumin seed (dhana-jira) powder
2 teaspoons sugar
1 teaspoon red chilli powder
a pinch of asafoetida
salt ot taste
Method
Wash the potatoes. Make slits on them. If you want, remove the skin.
Bake the potatoes on HIGH for about 6 to 7 minutes.
Mix all the other ingredients very well and stuff into the potatoes.
Arrange in a shallow dish and sprinkle a little oil and 1 1/2 tablespoons
of
water. Microwave on HIGH for 4 to 5 minutes.
