Ridge gourd Peels Chutney Recipe
Ingredients
1/2 lemon juice extracted
1/2 tsp. cumin seeds
1 pinch asafoetida
1 tsp. oil
salt to taste
1 cup fresh ridge gourd peels
2 flakes garlic (optional)
2 green chillies chopped
3-4 sprigs mint leaves
1 stalk curry leaves
2 sprigs coriander leaves
Method
Wash and drain peels. Heat oil in a pan, add peels, stir fry for
2 minutes.
Take off fire, cool. Place peels with oil in a small mixie.
Add all other ingredients, grind to a smooth chutney.
Adjust salt, chilli, as per taste.
Add a dash of sugar if desired.
Serve as a novel accompaniment to bhajis, etc.
May also be used as sandwich chutney.
