Bhindi Masala Recipe
Ingredients
250 gms bhindi (ladies finger/okra)
2-3 medium sized potatoes (optional)
3-4 green chillies
8-10 flakes garlic
1/2 inch ginger
i/2 bunch coriander leaves (cilantro)
1 tsp coriander powder
1/2 tsp haldi
1 tbsp oil
salt as per taste
2-3 medium sized tomatoes or 1/2 tsp amchoor powder (mango powder)
Method
Boil the potatoes and cut into small pieces.
Grind the red chillies with some water and the tamarind to make
a paste.
Heat oil in a kadai (Typical saag is made with coconut oil and those
of you who
like it can use it) and fry the chopped onions till light brown.
Add the potato pieces, salt, red chilli - tamarind paste or if you
are in a hurry - red
chilli powder and tamarind paste.
Add a little water if too thick and bring to a boil and then let
it simmer for 10-15
mins till a thick gravy is formed.
Serve with Rice or hot Phulkas.
